Waffles

Waffles are one of my favorite breakfast foods. They are fluffy and crispy and are just comfort on a plate. They were a staple of my visits to my Granny’s house as she would often make them as breakfast on the last morning of our visit. We would top them with butter, peanut butter, and maple syrup and it was awesome. Then I went to Norway and was introduced to waffles as a snack food. They will make thinner waffles, often in the heart shape and top them with creme fraiche and jam. Even with my love of waffles, this recipe did not come from my side of the recipe box, and I happened to find it in the box from Nick’s mom, Linda.

At our house we have the heart shaped waffle maker for gluten free waffles as I assumed that most gluten free batters would be too thin for a Belgian waffle maker. For the most part, that was a correct assumption when using a store-bought brand. We have tried a few different from scratch recipes now, and they have all been thick and fluffy, enough that we could use a Belgian waffle maker. Because the main player of this recipe is your flour, using a high quality 1:1 mix is going to serve you well. You can hide many issues behind some delicious toppings, but a grainy texture would be less than desirable. Make sure you are adding guar gum or a binding agent if it is not in your flour mix. Another option for fluffier waffles is to add a 1/4 tsp of baking soda to help the batter rise.

Ingredients
  • 2 Eggs
  • 1 3/4 cup Milk
  • 1/2 cup Oil
  • 2 cups Flour
  • 4 tsp Baking Powder
  • 1 Tbsp Sugar
  • 1/2 tsp Salt
Directions
  • Step 1 In a medium bowl, whisk together the dry ingredients.
  • Step 2 In a large bowl, mix together the wet ingredients.
  • Step 3 Whisk the dry ingredients into the wet ingredients.
  • Step 4 Heat the waffle iron. Once heated, spray with some oil to prevent sticking. Pour on about 1/4 to 1/3 cup of the batter to cook. They are usually done when they iron starts smoking, but if you want crispier waffles, keep on for an extra minute or two.
  • Step 5 When serving, top with you favorite ingredients. Some ideas are butter, maple syrup, peanut butter, jelly, etc.
